I was thinking about making a Republic Gunship with Black in place over the White and something else (yellow maybe?) in place of the dark red.

I was just wondering if anyone else has tried to take their lego set instructions and build with the intention of changing the main colors of the set?

A few. Stuff like making a different Jedi's ETa 2 or Aethersprite 1B. Whick are fairly simple swap outs of just a few plates. I've also been contemplating what would be needed to convert the horrid red SWTOR Republic Striker to a more correct Light Grey with red markings. I've never tried anything quite as involved as your gunship project.

I am thinking of doing something similar to the Jek-14's Fighter to make an Alliance E-Wing. I would suggest, as I did the aforementioned Eta-2 conversions, using LDD. You can usually find LDD files for official sets on Eurobricks. Use the color change tool and then print the parts page, this way you still make use of the inner parts that you don't see from your current RGS and only have to get the new outer parts.

Yeah I did a whole fleet of ETAs once. I'd definitely recommend doing it yourself. It’s good way of working out possible color schemes for future projects.

I.E. Note the color scheme of my current projects (in signature image).
