So what are the dimensions of something when someone says it is 28 bricks high and 33 studs long? I think I calculated the height. Would the height be 268.8 mm (or 26.8 cm). Any help on this matter would be great.

The dimensions are 28 bricks high by 33 studs long. Why would you need to convert? ;)

But seriously, if you really need to know why not simply put together 28 bricks and measure the height the take those bricks and lay them down in a line and measure the length.

BTW 32 studs is 10 inches. I know because LEGO train tables are multiples of 30 inches which fits three 32x32 baseplates or two 48x48s.

Yes. 1 brick high means the height of 1 brick, i.e. 9.6 mm, and 33*9.6 mm = 268.8 mm (rounded: 26.9 cm), and 1 stud long/wide = 8 mm, so that's 264 mm for 33 studs.
