You cannot heal, use items or do anything else in-between the stages, and you don't gain experience or loot before it is over - it is considered a singular battle in that respect. However, you can choose to skip any stage of the battle. Skipping it means that the NPCs getting attacked will be killed, but the enemies they face will not pursue you. Fleeing the battle means skipping the current stage and moving on to the next. You will not gain experience if you skip all the stages.
