I just actually updated the build (pictures coming soon!) and went for a compromise: I made the sails Tan, and gave the main sail stripes (sadly just on one side), but the Jib is all Tan. I've also made more adjustments (including a new cannon design). Quote

Now it also looks a bit like the 6271 Imperial Flagship, because of the tan sails, and because it's a redcoat ship with redcoat flags, obviously. Those two ships put next to each other would make a nice coherently looking fleet, I suppose. I'm glad you considered my advice to use tiles for the sails AND to use a custom cannon. The sails are perhaps the first thing people look at, and those here really do the job! Now I really want to have a set like that. Quote

I do feel like at this scale it might have been possible to make a slightly curvier hull—I know the original didn't have one but I'm quite fond of the brick-built hulls in sets like the new Eldorado Fortress or the 2020 Creator 3-in-1 Pirate Ship. I have no idea how to modify it without completely rebuilding the ship from scratch, however I have another small vessel (a really small one in fact, and it's a remake of a classic set too) in plans, and there I want to employ a sexy, curved brick built hull. For the back of the hull, maybe use 1x2 and 1x2x2 inverted slopes for the outer layer of hull instead of a 1x2x3 Quote
